"Greek" Fried Rice

This healthy meal was based on the concept of "Fried Rice."  I started with half a medium eggplant, peeled and cubed.  One diced tomato, about four diced mushrooms and about 1/4 of an onion, with sliced almonds and whole chia and sesame seeds.. I tossed it all in EVOO and put it under the broiler to get it crispy/browned.

Once my brown rice was done, I tossed it in with the broiled veggie mixture and added some more EVOO then sauteed it for another couple of minutes.  I served it with some of my home made venison/beef/pork sausages.  The Greek yogurt on the side has EVOO, lemon a lot of dill and some diced onion.  Of course the meat looks like little turds... but it sure don't taste that way!

A lot of the fat in the pork and beef broiled off and the lean venison just gives these a great taste. I season with St. John's Savory (brought back to me from Newfoundland), basil, rosemary, salt and pepper.  We both had a serving for lunch and I have more links that will make their way into another few meals.

This is a healthy and delicious alternative to it's fatty Chinese counterpart.  It was easy to make too!

  1. I am going to try this kind of rice - I have some raw almonds and the other ingredients to give this a shot. Yes, the meat does look odd - but I am sure they tasted good :)
